Throughout the course, participants explore the fundamentals of professional cooking, nutrition, food safety, and kitchen management while engaging in extensive practical sessions that simulate real-world hospitality environments.

Hotel & Catering: History, types of hotels, organizational charts, and departmental responsibilities
Food & Beverage Production: Kitchen planning, layout, and organization; duties and responsibilities of chefs (Chef de Partie, Saucier, Rotisseur, Entremetier, etc.)
Hygiene & Safety: Personal hygiene, food safety, kitchen rules, sanitation, and HACCP standards
Food Science & Nutrition: Basics of nutrition, food poisoning, contamination, and healthy cooking practices
Culinary Techniques: Knife skills, cutting methods, stocks, sauces, soups, salads, dressings, garnishes, and accompaniments
Kitchen Operations: Menu design, food costing, pricing policy, recipe standardization, and storage management

Continental Cuisine: Stocks, soups, sauces, salads, breakfast items, light foods, entrées, desserts, and side dishes
Indian Cuisine: Gravies, breads, pulao, curries, tandoori specialties, soups, salads, and traditional sweets
Chinese Cuisine: Oriental sauces, snacks, fried rice, chowmein, soups, and classic main courses
Nepali Cuisine: Momo, Dal Bhat set, mushroom choela, alu mukka, sukuti sandheko, bhatmas sandheko, and other local favorites
Spanish & International Cuisine: Tortilla de patatas, pollo al ajillo, smoked chicken salad, and other signature dishes from the CMC menu
Baking & Pastry: Breads, cakes, muffins, and cookies
